Easy Recipe: Roasted Delicata Squash

A great way to keep your tummy happy during the Winter is by incorporating more pre-biotic fiber (fibers that feed your gut bacteria) into your diet.  Not just pre-biotic fiber, squash is loaded with antioxidants.  Even better, it is an affordable, nutrient packed vegetable during the Winter.  You can swap this recipe out with other squash varietals.

Easy Recipe: Roasted Delicata Squash
Delicata Squash is a delicious, tender varietal of Winter Squash. You can choose to leave the skin on for the health benefits (extra fiber) or roughly peel the skin off. Squash is a naturally sweet vegetable that helps curb those sugar cravings. It is also a great warming vegetable for the Winter Months.

Ingredients

  1. Preheat the oven to 385F. Line a cookie sheet with parchment paper.
  2. Wash and roughly peel the delicata squash. Slice in half length wise, then slice again into wedges about 1/2 inch thick. The thinner you slice the wedges, the quicker it will cook!
  3. In a bowl, toss the sliced delicata squash with oil & herbs. Salt & Pepper to taste. Feel free to experiment with new herbs & spices. You really can't go wrong when roasting veggies!
  4. Roast at 385F for 30-35 minutes. The Squash should be tender when inserted with a knife. I love to let my squash brown & caramelize a little on the edges.
  5. Remove from oven and let cool.
Recipe Notes

You can easily use this recipe for all kinds of Winter squash.  Another favorite of mine is Kabocha Squash in which I actually leave the skin on!  Just make sure you slice the squash thin (about 1/2 - 3/4 inch thick).
